Forty-five years ago, as a kid growing up in Southern California, one of my fondest memories was spending time in Newport Beach and on Balboa Island’s boardwalk. Of course, riding the waves in Newport was always a blast and time spent in Balboa’s penny arcades playing Skee Ball to win tickets toward some cheesy prize was a mandatory childhood activity…but my fondest memory of all, you guessed it, were those terrific chocolate covered frozen bananas from the place that invented them, right there on Balboa Island.
I must have spent hours watching them dip the bananas in a vat of warm creamy melted chocolate, swirl it around and then hold the chocolate covered banana high overhead for the chocolate to drip back into the vat. Oh, what a show and wow, they were soooo good!
I never imagined that forty years later I would be in the chocolate business and teaching chocoholics of all skill levels how to make incredible chocolate dipped frozen bananas, even better than the ones I so fondly remembered from my childhood.
So, get ready to learn the secret techniques for making The World’s Most Incredible Chocolate Covered Frozen Bananas and Banana Bites!
SECRET #1: Always Use Chocoley Chocolate

SECRET #2: Preparing Full Bananas On A Stick
- With the peel still on the bananas, cut approximately 1" off the bottom of each, so you have a flat square bottom. Don't throw away the cutoff pieces.
- With the peel still on the bananas, push a popsicle stick into the bottom of each banana. The peel will prevent the bananas from splitting.
- Peel each banana and place in an individual plastic banana bag with
a twist tie, then place in freezer for at least 4 hours. Put a tooth
pick or bamboo skewer in each of the cutoff ends, peel, remove the
brown spot at the end and place in the freezer...these are great individual
bites or samples.
SECRET #3: Preparing Banana Bites
- Peel and cut bananas into approximately 1" pieces.
- If you want the chocolate covered banana bites to be on a stick push a sucker stick into the center of each banana piece.
- Place each banana piece on a waxed paper lined tray and cover with plastic wrap. Then place in freezer for at least 4 hours.
SECRET #4: How To Make Dipping Whole Frozen Bananas Easy
If you're dipping whole bananas, always use at least twice as much chocolate as you’ll need, so you have enough chocolate to dip the bananas into and aren’t struggling to roll the frozen bananas in a shallow pool of chocolate to coat the banana. You want to be able to completely submerge the banana in melted chocolate.
SECRET #5: Melting & Preparing The Chocolate
If you have Bada Bing Bada Boom Dipping & Enrobing Formula and you're eating the bananas right away you can simply melt the chocolate and use it. If you're going to eat the bananas later, prepare the chocolate using the directions that came with your chocolate, or click here.
If you have INDULGENCE Ultra Couverture Dipping & Enrobing Chocolate and you're eating the bananas right away, you don't need to temper your chocolate. Simply melt the chocolate and use it. If you are not eating the bananas right away, you should temper the chocolate using the directions that came with your chocolate or click here.
If you have Just Melt It! Fountain & Fondue Chocolate and you're eating the bananas right away, you don't need to temper your chocolate. Simply melt the chocolate and use it. If you are not eating the bananas right away, you should temper the chocolate by following the directions on our how to temper chocolate page. The instructions on the lid of your Just Melt It! are not for tempering - they are simply for melting and eating the chocolate right away.
SECRET #6: Dipping The Completely Frozen Bananas or Banana Bites
- Remove bananas from freezer and dip frozen banana in your favorite properly prepared Chocoley dipping chocolate. Hold the dipped banana above your bowl or pot of chocolate for the excess chocolate to drain back into the melted chocolate bowl.
- If your chocolate covered banana bites are NOT on a stick: to dip the banana bites you can use one of our two or three prong stainless steel dipping tools.
- Optional: You only have about 20 seconds after dipping until the chocolate has hardened on the banana. So, if you want to dip in crushed peanuts, chocolate jimmies or other candy coatings...you only have a 20 second window of opportunity. Seize the moment!
SECRET #7: Warning: Don't let the bananas thaw or they'll turn to mush!
